Tandoori Gobi - Baked Cauliflower Recipe by Annuradha Toshniwal INGREDIENTS- 2 cinnamon sticks 2 bay leaves 2-3 cloves 2 whole black cardamoms salt 1 whole cauliflower 250 gm. cheese cottage cheese (paneer) 2 tbsp. yoghurt 1 tbsp. oil 2 tbsp. lemon juice 1 tsp. red chilli powder 1 tsp. chopped ginger 8 raisins chopped coriander garam masala METHOD- - Boil water with spices for 15-20 min. - Blanch whole cauliflower for 10 min. Drain. - Mix together the stuffing ingredients. - Fill the crevices between the cauliflower florets with the stuffing. - Spread remaining stuffing over the cauliflower heads. Bake in a gas tandoor till golden. - Serve dry or with green chutney or with makhani sauce.   Less

It is flavored with a blend of spices called the Chai Masala. Ingredients: 1 & 1/2 Cup Water 1 Cup Milk 2 tsp - Tea Powder 2 or 3 small pieces Ginger 2 Pieces - Cardamom 1/4 tsp Tea Masala (Chai Masala) 1 tbsp Lemongrass Leaves Method: - Leave one and half cup of water to boil - Pound Two or Three pieces of Ginger and add to water - Pound Two pieces of Cardamom and add it to water - Add Two teaspoon of Tea Powder - Boil for next Two to Three minutes - Add Lemon Grass - Add Chai Masala (Tea Masala or Tea Spice) - Add Two cups of Milk - Add two teaspoon and a little more sugar - Lower the flame before it overflows - Pour it hot in the serving cup, straining it through a fine sieve.   Less

Paneer Bhurji Paratha - Scrambled Cottage Cheese Bread Recipe by Ruchi Bharani [HD] INGREDIENTS- butter steamed carrots & french beans finely chopped capsicums finely chopped onion finely chopped coriander leaves tomatoes deseeded & finely chopped red chilli powder garam masala sugar ginger chilli paste paneer (cottage cheese cubes) onions cut lengthwise all purpose flour paste coriander mint chutney all purpose flour rotis (maida rotis) or readymade tortillas METHOD - Take 1 and 1/2 tbsp. butter and heat it on a round bottom pan. Add the chopped onions once the butter melts. - Add capsicums, steamed french beans, carrots, deseeded and chopped tomatoes. Saute all the vegetables for 1-2 minutes. - Add ginger chilli paste, red chilli powder and a little bit of sugar. Sprinkle coriander leaves. Mix well. Let the mixture cook for 1-2 minutes. Don't overcook them. - Scramble the paneer and add the pieces to the mixture. Mash the mixture a little bit. - Turn off the flame and add salt as per taste. - Empty the stuffing mixture in a bowl. Let it cool. - Spread coriander mint chutney on the centre of the rotis and spread some chopped onions. - Fill the stuffing mixture in the rotis and seal the edges with the help of all purpose flour paste. - Heat up butter on a round bottomed pan. Roast the parathas till they show brown spots. - Chop them into two and serve them with coriander mint chutney.   Less

Dhokla - Gujarati Snack Recipe by Ruchi Bharani - Vegetarian Ingredients: 1 cup Urad Dal or White Lentils 2 cups Rice 1/2 tsp Soda bi-carbonate 1 tsp Ginger Chilli paste 1 tbsp Methi dana or Fenugreek Seeds 1/2 Lemon Pepper Ghee or Clarified butter Salt to taste Method: For Dhokla batter: -Soak Urad Dal and Rice, separately, for 8 hrs. -Grind the Urad Dal into a fine paste -Grind the Rice into a coarse paste. -Mix the ground urad dal and rice paste together. Add Methi or fenugreek seeds and let it ferment for a good 8hrs. For making Dhokla: -Grease an 8-9inches thali or plate (as shown in the video) -Take a big, slightly deep vessel, fill it with water, place a steel ring or stand in it. Cover with a lid or a plate and let the water come to a complete boil. You can also use a steamer if you have one. -Take the fermented batter give it a stir and if you feel it is too thick you can add WARM water (do not use cold water) to get a nice pouring consistency. -Add ginger chilli paste and salt to the batter and mix well. -Since the batter is enough for two rounds, you an split the batter into two. -Keep your thali or plate kept ready in the steamer. -Add a few drops of lemon to the first batch and without stirring add 1/4 tsp of baking soda on the lemon juice. Give it a quick stir. -Quickly pour the batter into the plate or thali. -Sprinkle some ground black pepper and cover it. -Let it steam for 10-15 mins on a full flame. -After 15 mins check on the dhokla. once they are ready apply a little bit of ghee on the top. -Remove from flame and let it cool. -Cut the dhokla into small squares, separate them. -Serve them hot and fresh with your favorite chutney   Less

Ingradients: 5 Medium Sized Potatoes (Boiled and Coarsely Mashed) Few Curry Leaves 8 - 10 Cloves of Garlic 1 Big Piece of Ginger 5 Green Chillies Coriander Leaves 1/2 Tsp - Mustard Seeds 1&1/2 Tbsp of Oil 1&1/2 Cup Gram Flour Pinch - Turmeric Powder Pinch - Asafoetida (Hing) Pinch - Salt Pinch - Soda Bicarbonate 1 Tbsp - Cornflour 1/2 Tsp - Red Chilly Powder 5 - 6 Breads Coriander Mint Chutney Spicy Garlic Chutney Method: - Grind the aromatics i,e, Chillies, Ginger, Garlic - Heat 1&1/2 Tbsp of oil in a pan - Add Mustard Seeds & wait for them to crackle - Add Asafoetida & Curry Leaves, Ginger, Garlic & Chilli Paste, Mashed Potatoes, Turmeric, salt (to taste) & Coriander Leaves and mix evrything well and cook for some more time. - Remove the potato Filling in different bowl and let it cool - Heat Oil in a Pan - Mix Gram Flour, Cornflour, Turmeric Powder, Red Chilly Powder, Asafoetida, Salt, Water, Soda Bicarbonate & Hot Oil in a bowl and mix well all the Ingredients so as to to make a smooth paste (not thick paste) - Make small balls of Potato fillings - Dip Potato balls in the smooth paste - Deep Fry the potato balls till golden brown - Cut the Bread into two halves - Add Coriander Mint Chutney & Spicy Garlic Chutney on both the sides of the bread - Place the Batata Vada in th centre of the bread & Close the bread - Serve Hot with Some More Coriander Mint Chutney, Spicy Garlic Chutney & Green Chillies   Less
