Uttapam is a very popular dish in South India. Generally served with Sambhar (http://bit.ly/YGTWyI) and Coconut Chutney (http://bit.ly/YPpIqR). Chef Ruchi Bharani teaches how to make quick, simple and easy to cook homemade recipe Uttapam. Try this breakfast snack recipe at your home. Ingredients: 1 cup White Lentils (Urad Dal) 3 cups Parboiled Rice Salt 1 finely chopped Capsicum 1 finely chopped Onion 1 deseded and finely chopped Tomato Coriander leaves Green Chillies Oil Method: - Soak the the urad dal and rice separately for at least 6 - 7 Hrs - Grind the urad dal with minimal water in a mixer to make a smooth paste and rice into a coarse paste - Mix the two and let it ferment for about 6 - 7 hrs - Grind the batter into a fine smooth paste - Heat a pan before frying the uttapam and once its hot bring it off the flame - Spread the batter on the pan using a spoon in a circular motion - Put it back on the flame and cook it on high flame - After the batter dries out a little brush some oil on it and very quickly add chopped onions, chopped tomatoes, capsicum, green chillies, coriander leaves. - Sprinkle little salt to it - Flip it over and cook the other side as well. - Cook evenly and the uttapam is ready to be served. Chef Annuradha Toshniwal brings you this extremely delicious stuffed zucchini rolls recipe which is made with zucchinis, paneer filling and cheese. Ingredients: 2 Zucchinis - sliced into flat, long 3" strips Filling- 1/2 Cup Paneer - mashed well 1/4 Cup Cheese - cubed 1/2 Cup Olives 1/2 Cup Cherry Tomatoes Dash of Tabasco Chilli Sauce Sea-same seeds Red or Green Pesto Black pepper to taste Salt to taste Method 1: To make the Rolls: - Slice thin strips of Zucchini with a cutter. - The Zucchini strips need to be kept moist. If you cut them in the morning and cook them in the afternoon then , wrap them in a foil or cling film them or in a wet cloth and keep. For the filling -Take some Paneer - Add salt to the Paneer filling - Add Tabasco Sauce to the Paneer filling - Add some Pepper to the Paneer filling - To this Paneer filling you can also add crushed peanuts or chopped Beans - Now mix the filling well - To make it richer add some grated cheese as well - Now cling film them and keep them in the refrigerator at least for one hour - Then remove the toothpick and cut it in the center. - then secure with a toothpick - Now take a Zucchini strip. Place a little mixture of the Paneer on it - Then gently roll it tight and cut it. Seal it with a toothpick. Chef Ruchi Bharani teaches you to make Modak which is offered to Lord Ganesha during Ganesh Puja and also considered as Ganesh Ji's favorite. Learn how to make simple to cook homemade recipe - Modak. Ingredients: 1 & 1/2 cup Wheat Flour 2 tbsp Semolina (Rava / Sooji) Salt 1 & 1/2 tbsp Clarified Butter (Ghee) 1/2 tsp Cardamom Powder 1 tbsp Roasted Poppy Seeds (Khas Khas) 1 tbsp chopped Cashew Nuts 1 tbsp chopped Almonds 1 cup Grated Fresh Coconut 1 cup chopped Jaggery Oil Method: Take wheat flour, salt, semolina, ghee, water in a bowl and start kneading the dough very well Keep the dough to rest for about 10 -- 15 mins Meanwhile heat ghee in a pan and add grated coconut to the heated ghee Cook the grated coconut for a minute and add the jaggery Cook this till the jaggery melts Turn off the flame and add the cardamom powder, roasted poppy, almond flakes, chopped cashew nuts and mix everything well Remove the filling onto a plate and let it cool completely Take small portions from the dough and make flat round Apply ghee to the rolling board and rolling pin and start rolling the roti into soft small rounds Cut it with a ring to get a perfect shape and equal size Take the small roti and put about 1 tbsp of the filling Pinch the edges of the roti, bring the edges together, seal and close it so that while frying them no oil goes in Heat oil in a pan and put the modaks for frying in medium hot oil Fry and cook them in medium flame till its golden brown in color. Keema, Kheema or Qeema, whatever you wish to name it, is an extremely delicious South Asian meat dish. It basically means minced meat which you can prepare in a variety of ways using your favouite meat. Chef Shantanu Gupte is up with deeply flavorful, spicy & Mumbai's street food style chicken keema recipe. Ingredients: oil 1 bay leaves 1 cinnamon 1 star anise 2 to 3 cloves 1 tbsp peppercorn 1 onion (finely chopped) salt to taste 1 tsp ginger paste 1 tsp garlic paste 1 tsp red chilli powder 2 green chillies 1 tsp turmeric powder 1 tsp coriander powder 1 tsp jeera powder 2 tbsp brown onion paste 400 grams chicken mince (keema) 1 tsp kasuri methi (fenugreek leaves) 3 tbsp tomato puree water to sprinkle (adjust to consistency) 8 to 10 mint leaves (roughly torn)/ Coriander leaves roughly chopped For garnish: 1 boiled egg Method: - Heat oil in a pan and add the khada garam masalas in it. Khada garam masalas include bay leaves, cinnamon, star anise and cloves. - Add the coarsely grounded peppercorns to the above ingredients and saute them well. - Add the chopped onions and salt to the oil and saute them slightly. - Add the garlic paste and the ginger paste and saute slightly. - Add the red chilli powder, green chillies, turmeric powder, coriander powder and the jeera powder and let them cook for a while. - Add the brown onion paste and mix well. - Add the chicken mince (keema) to the above ingredients. - Add salt to taste and the kasuri methi (fenugreek leaves) along with the tomato puree and let them cook well. - Sprinkle just little water over the chicken keema. - Add the mint leaves (roughly torn) to the keema and let it cook for about 2 minutes. - Serve the chicken keema in a bowl with some onions on top and garnish it with grated boiled egg.
