Our reading habits, especially as they occur in public spaces, are subtly shifting each day. Reinier Gerritsen has taken up the current plethora of books and their readers on New York City’s subways as the proverbial canary-in-the-coal-mine, an indicator of the still-robust nature of public readership, in the face of its ostensible decline.nnWe joined Gerritsen on the subway in New York City, where he took us through his process of shooting. Of the chaotic, crowded cars, Gerritsen remarks, ‘The light is magnificent…it’s such a dense situation of people. A lot of sociological events are very visible in the Subway.’ Gerritsen’s photographs of people reading books on the subways began with modest observations and evolved into The Last Book, a series of unexpected, documentary portraits, and an illustrated index and bibliography charting readership. Then everything was composited in After Effect's 3D world and animated using the Puppet Warp tool.nThe only exception was the last shot with the wings where I shot it at 60FPS with Panasonic GH4 then then slowed down to 24. View the full version of this inspiring talk at http://inda.ba/15Fga2Lnn"The best way to be global is to be local," renowned Brazilian chef Alex Atala declared at Design Indaba Conference 2013. nnFor Atala a chef's creativity does not lie in creating something new, but rather creating something that surprises people. He also spoke about primitive, versus modern, interpretations of food and flavours. It's about integrating what is already known into something totally new. "Old ideas can be much more clever, intelligent and modern than new ideas," he believes.nnOur preconceptions are what prohibits us from experiencing new things in a unique manner, Atala proposes. Looking to creativity and innovation, and what it means to chefs, Atala believes that the two are indistinguishable: “Innovation is creativity and utility!"nnChallenging the cultural interpretations of food is one of Atala's key interests. He believes that an entire culture can be summed up in three flavours: “If I said soya sauce, ginger and seaweed your mind goes to Japan. If I said tomato, basil and mozzarella, your mind goes to Italy,” says Atala. In a similar way Atala wants to sum up the taste of the Amazon for both locals and visitors in his native Brazil. nnAtala also spoke about recycling flavour and the taste of insects, and how the cultural stigma attached to them prevents us from eating then. nnConsidering the scarcity of food Atala believes that people need to start eating entire ingredients: "We need to learn how to eat an entire ingredient, it is more than just reducing waste, it’s about being respectful to the environment.”nnAtala also showed a video that revealed how he creates his tasting menu at his famous restaurant D.O.M in Sao Paulo. nnDesignindaba.com hosts hundreds of videos of speaker presentations and interviews and world design news. See more architecture and design movies at http://www.dezeen.com/moviesnnDesigner Konstantin Grcic tells Dezeen that American furniture company Emeco had to industrialise its production methods to produce his new Parrish chair in this video interview filmed in Milan. nnGrcic originally designed the Parrish chair as part of a range of furniture for Herzog & de Meuron's barn-like Parrish Art Museum on Long Island, completed in 2012.nnThe chair was launched by American furniture company Emeco as a commercial product at Milan earlier this year.nnIn the movie, Grcic explains that he approached Emeco to produce the chair because of its experience of working in aluminium, most famously with the iconic Navy Chair, which Emeco has produced since 1944.nn"I felt we should change the way Emeco make chairs" - Konstantin Grcicnn"Emeco stands for chairs in aluminium and aluminium was the perfect material for the chair that we had in mind because the [Parrish Art Museum] is very open [to the elements]."nnUnlike the Navy Chair, in which each piece is welded together by hand, the legs, armrests and backrest of the Parrish chair are all locked together by a single joint under the seat.nn"Everything is mechanically joined to a central core, a piece of die-cast aluminium, which is really the heart of the chair," Grcic explains.nn"So we have one moulded piece that solves all of the structure of the chair and the seat is exchangeable. You can have an upholstered seat, a plastic seat or a wooden seat."nnGrcic says that he deliberately wanted to move Emeco away from the time-intensive production methods involved in producing the Navy Chair.nn"I felt we should actually change the way [Emeco] makes chairs," he says. "Industrialise it, simplify it, eliminate all the dirty work, all the hand labour. That's what really informed the concept of the chair."nnHe concludes: "Emeco will always produce the Navy Chair in the way they produce it, but I think now we've established another form of production inside their company."   Less

I like to be a starter; I'm good when I'm a starter, when I'm young and new in a field or in a culture."nnDespite not having a large design scene, Jongerius says that Berlin's green spaces and relaxed attitude towards money drew her to the city.nn"We decided to go to Berlin because it's a green city. It's a big city but it feels like a village," she explains.nn"But the main thing is that it is not about money. There is not the stress of money in the city. It has a relaxed environment, which also makes it creative: things are moving and there's a young crowd. There's not a huge design crowd, but I'm not interested in having that close to me."nnJongerius prefers to travel around the world to meet her clients, which she says she purposefully restricts to a select group.nnAlongside longstanding relationships with Maraham, who she designs new textiles for each year, and Vitra, where she is creative director of colours, textiles and surfaces, Jongerius is currently working with airline KLM on its passenger plane interiors and is part of a team of Dutch designers, including Rem Koolhaas and Irma Boom, chosen to re-design the North Delegates’ Lounge at the United Nations headquarters in New York.nn"This is the group of projects that I'm now working on" Jongerius says. "I have a very small group of clients; I really am very picky with who I work with. I want to have a longer relationship with clients so that you can build a collection together."nnWorking with a few large, established companies also allows Jongerius to keep her studio small, she says.nn"I don't have a hands-on workshop in the studio," she explains. "I had that before, a large one, but now that I work with larger companies there is a huge team who are doing the hands-on work."nnJongerius concludes: "I'm spoilt, because the clients do their own research and development for me. See more architecture and design movies at http://www.dezeen.com/moviesnnMovie: in our second video interview with Hella Jongerius, the Dutch designer discusses her work with airline KLM and explains how, despite being unfamiliar with the aviation industry, she has been able to build a successful relationship with the company. nnEarlier this year, Jongerius designed a new interior for the business class cabins in KLM's Boeing 747 aircraft and is currently redesigning both the business and economy class cabins for KLM's fleet of 777 and Dreamliner planes.nnJongerius admits that working with an aviation company has been challenging.nn"It's a difficult industry, a very demanding industry," she says, recalling her early meetings with KLM. "You had people around the table that don't speak the same language. They spoke a language that was new to me, and I spoke a language that's new to them."nnDespite this, Jongerius says that she was able to build a relationship with the company and is now looking ahead to a longer-term collaboration.nn"I've worked for two years with this group, and we really now know where to go, where to steer and what we can do in ten years," she says.nnJongerius was initially approached by the airline to design the carpets, curtains and seat covers for the cabin, but soon convinced them to let her design the chairs as well.nn"It's normal in aviation to buy a chair from the shelf and do some modifications [to it]," she explains. "I said, 'I can do that much better, give me the chair [to design]'. They trusted me and so we went on."nnShe reflects: "If I now look back, that was really weird for them, but it all depends on whether you can connect yourself with the person on the other side of the table. I think we were lucky that we trusted each other. I think they're weird; they think I'm weird. I gave them a masterclass in design; they gave me a masterclass in aviation."nnJongerius' redesigned business class cabin features spotted and striped dividing curtains, leather and aluminium details on the chairs and a carpet pattern inspired by an image of the Milky Way. Jongerius explains that she wanted to add a sense of luxury and tactility to the flying experience.nn"As soon as you're in a plane you have extra hours, because you can't telephone and you can't be on the internet," she says. "So it's an outstanding condition and [I wanted] to add something tactile: human materials, attention, details."nnShe adds: "For business class it was easy, because there is already luxury, privacy. Now I'm doing it for economy and that's difficult because the restrictions are quite narrow, so it's harder to get there. But I'm aware that I can make only very little steps, so I see myself on a longer journey."   Less

See more architecture and design movies at http://www.dezeen.com/moviesnnFreedom of Creation co-founder and 3D Systems creative director Janne Kyttanen tells Dezeen that he believes one day everyone will have easy access to 3D printing in the first of a series of video interviews with pioneering figures in the world of additive manufacturing. nnWe visited Kyttanen during a road trip across the Netherlands and Belgium, where many of the major players in 3D printing are clustered, as part of our research for Print Shift, the magazine about 3D printing that we launched earlier this year.nnIn the movie, Kyttanen says that the actual technology behind additive manufacturing hasn't changed much in recent years, but the interest in it has rocketed.nn"When it comes down to the technologies themselves, fundamentally nothing has changed," he says.nn"The biggest change that has happened is the awareness. People know that these things exist; they know the possibilities. Also, the ease of use of software: pretty much everything is getting easier and easier and once that happens the masses start picking it up."nnIn 2011, Kyttanen's design studio Freedom of Creation, which pioneered the use of 3D printing technology to create consumer products, was acquired by American 3D printer manufacturer 3D Systems and he now acts as creative director for the company.nnHaving been at the forefront of 3D printing since the 1980s, when the company's founder, Chuck Hull, invented stereolithography (SLA), 3D Systems has recently turned its attention to the consumer market. In 2012 it launched the Cube, an affordable desktop 3D printer promising the kind of plug-and-play simplicity we have come to expect from the electronic products in our home.nn"We want to put 3D printing in every home," says Kyttanen. "A lot of the home machines that came on the market were open-source and people could tinker with them. What we're trying to do is to make products where you can just open the box, take out the machine, plug it in, send a file and it starts printing. That's truly what's happening with the Cube."nnThe Cube is a simple fused-deposition modelling (FDM) machine, which builds up objects layer-by-layer using a plastic filament fed into a heated print nozzle.nn"The Cube is the most plug-and-play 3D printer on the market at the moment," Kyttanen claims.nnRecently, Kyttanen launched a range of women's shoes that can be printed out overnight on the larger version of the printer, the CubeX. He strongly believes that as the technology moves into people's homes, it will transform the way they act as consumers.nn"Everyone will get interested in design and making things instead of just being consumers and buying things," he says. "The designer's role [will be] merely creating better templates for all these people."nnHe continues: "If you want to customise something for yourself, now you have the ability to do that. You can make any shape you want. Now everybody has the power to do whatever they want, with very easy tools."nnIt is this ability to customise products, Kyttanen says, which will drive the demand for 3D printing in the home.nn"People always ask me what would be the killer product for the technology, what would sell the most," he says. "I always tell people that I don't think it's a product at all, I think it's the empowerment itself."   Less

I've seen the negative side of it as well; because of the dynamics things change and a company that was great to work with for five years suddenly becomes less interesting."nnGrcic concedes that he would prefer to work with fewer companies and build long-term relationships with them.nn"To be honest, I prefer working for only a very few companies and having a very steady relationship," he says. "That's how it was in the old days, especially in Italy. The great masters each had a few companies that they worked for, almost for a lifetime, and that's what produced the really great work."nnHowever, Grcic says that is still possible to work with a company on a short-term basis and produce good work.nn"I think some companies, for sure, hire designers for marketing reasons, for having their names in the catalogue," he says. "But there are other companies - and those are the interesting companies - that are looking for designers as partners for realising certain projects."nnHe continues: "It's interesting that a company like Magis, for example, somehow succeeds in bringing together very different designers on very different projects. If it works, it's actually quite fascinating. It creates an interesting tension and energy."nnSimilarly, Grcic says that a long-standing relationship with a company doesn't guarantee good design.nn"There are companies that only work with very few designers and it can show that the continuity creates better work," he says. "But it can also end in repetition and a kind of dead-end street."   Less
