Dezeen and MINI World Tour: in our next movie from Milan, architect and designer Fabio Novembre takes us to a converted farm near the city centre and explains why he sees the project as an important response to Italy's ongoing economic crisis. nn"Milano used to be a place full of farms," Novembre explains. "Most of them were in the city centre, very close to the Duomo, and this was one of them."nnCalled Cascina Cuccagna, the farm is pressed-up against apartment buildings in the Porta Romana district of Milan, to the south-east of the city centre.nnNovembre explains that the eighteenth-century buildings had been derelict for many years, until they were restored and converted into a cultural centre in 2008 by a consortium of local companies and residents.nnHe believes this bottom-up approach to redevelopment is a "very interesting example of how Milan can evolve" in the face of a lack of government investment.nn"A group of citizens asked the city government, that is now without any money, to rent the place for 20 years," he says. "It's really a new way that we can approach the [economic] crisis as Italians. There is no public money anymore, so we have to really organise ourselves on a smaller scale to have different solutions for evolution."nnNovembre shows us round the new facilities, which include a restaurant and bar, organic grocery store, gallery and a community garden where the fruit and vegetables for the restaurant are grown.nnAll these facilities are available to the public and Novembre believes it is this local community spirit that makes the farm special: "The restaurant here is called Un Posto a Milano, which means 'a place in Milan' - that's the essences of this place, that's the spirit of this place."nnCascina Cuccagna also has a special place in Novembre's heart for another reason. "Fourteen years ago, exactly in this place, I met my wife," he reveals. "There used to be a very small, tiny restaurant here [where we met]. Read more design and architecture stories on www.dezeen.comnnGraduate designer Katharina Unger has designed a table-top insect breeding farm that allows people to produce edible fly larvae in their homes.nn"Farm 432 enables people to turn against the dysfunctional system of current meat production by growing their own protein source," said Unger.nnAs part of the project, she bred and ate black soldier fly larvae in a prototype system, then designed a machine to replicate the process on a domestic scale. "I ordered larvae and built up my own fly colony to see if the process works," she told Dezeen. It was very exciting to watch the larvae migrating up the ramp, new flies emerging, mating and laying eggs."nnIn her design for the farm, soldier fly larvae are dropped into a chamber at the top of the appliance, where they develop into adult flies and move to a larger chamber. Here they mate and produce larvae, which fall down into a "kindergarten" area, mature and become trapped in a harvesting pot, ready for consumption. A few of the harvested larvae are selected to be dropped back into the top of the machine and start the cycle again.nn"Black soldier fly larvae are one of the most efficient protein converters in insects, containing up to 42% of protein, a lot of calcium and amino acids," the designer adds. After 432 hours, 1 gram of black soldier fly eggs turns into 2.4 kilograms of larvae protein, so Unger predicts that people could harvest approximately 500 grams of larvae a week, producing two meals.nn"The larvae I bred have a very distinctive taste," she told us. When you cook them, they smell a bit like cooked potatoes. The consistency is a bit harder on the outside and like soft meat on the inside. The taste is nutty and a bit meaty."nnHer favourite recipe with the insects so far is larvae and tomato risotto: "I like to mix parboiled rice with wild rice together with the larvae, put a lot of tomato sauce in it and a bit of parmesan cheese. A bit of parsley or basil on top and you have a perfect meal."nn"With my design I am proposing a new lifestyle," the designer told Dezeen. "It´s about a potential new western culture of insect eating and breeding... This is one of the easiest ways to make a quick worm farm for very little money, you can spend a few more dollars to get a bigger sized box like 80 liters but I have a smaller, sweeter box, the worms are in and busy at work and I hope to get very good quality compost from it and I will use it for growing seeds and hopefully some tropical fruits... It took me about 10 minutes to get everything ready and make and if the box is not opaque cover in a bin bag and place a stick on the lid to let air through. It's very important to NEVER put fatty foods in such as meat or cheese in the wormery but greens and veggie scraps are the gold!
